  • Profile

    N°02 : Vegetal, lively and mouth-watering.
    Fresh herbal notes give way to tangy plum and combava (kaffir lime), finishing with a subtle spicy touch and a saline impression.

    N°05: The roundness of white flowers (jasmine) is balanced by citrus notes (bergamot, citron), bringing a bright acidity on the mid-palate.

    A flattering, very pleasant profile, with floral persistence and a light bitterness on the finish.

    N°11: Generous, comforting and intense notes.
    Its aromatic complexity combines toasted notes, cooked apricot, subtle leather, cocoa beans and quince compote.
    A comforting profile with great length on the palate, offering pairing possibilities with red meats, game and mushrooms…

    N°02: Grilled fish, sea bream ceviche, foie gras, green vegetables (asparagus, artichoke, leeks…), smoked burrata.

    N°05: Dishes with mild spices, scallop carpaccio, fresh goat’s cheese, roasted fruit, vegetable terrine.

    N°11: Veal, roast poultry, morel risotto, beef with chanterelle mushrooms, aged goat’s cheese, blue cheeses, cocoa dessert.
