OUR PHILOSOPHY

No intention to imitate

Alcohol-free should not be a copy or an incomplete version of wine or another beverage.

Since the beginning, Nivers has developed its own gustatory language, exploring the possibilities offered by botanicals, tea and fermentation.

We explore aromatic expression, texture on the palate and precise food-parings.

Each signature has its own sensory architecture, crafted to enter into dialogue with dishes, from fine dining to everyday meals.

OUR EXCEPTIONAL INGREDIENTS

A precise blend

As in perfumery or gastronomy, blending is about creating harmony.

Each ingredient is selected to interact with the others: adding tension, supporting texture, lengthening the finish or revealing a pairing.

It is within this balance of exceptional ingredients that the identity and singularity of each Nivers cuvée emerge.

Fine teas

Tea is at the heart of our blends.

Depending on their origin, terroir and processing method, tea bring structure, texture, natural tannins and aromatic finesse.

We select profiles capable of creating balance and complexity, far beyond a simple infusion.

French organic verjuice

Verjuice is one of the secrets of liquid gastronomy.

Made from grapes harvested before full ripeness, it delivers a fine, straight and luminous acidity, far from any sense of harshness.

At Nivers, we use it as a balancing ingredient.

It brings tension without overpowering, extending aromas without freezing them.

Botanical extracts

Plants, flowers, spices, roots and fruits are worked as elements of expression.

Temperature, infusion time and extraction intensity: each parameter influences the texture and final balance.

Our approach prioritises precision and subtlety over aromatic exuberance.

Mastery of techniques

Blending is also a combination of techniques that we have learned to master, now fully part of our know-how.

Our production process is entirely natural, produces no alcohol and contains no preservatives.

It relies only on the interaction between water and botanicals, yet requires a high level of technical precision to achieve balance.

Tea fermentation

A structural element of our cuvées and a driver of complex aromatic expression, non-alcoholic fermentation shapes both depth and identity in our creations.

After several months of aging in stainless steel tanks, this fermented base is then blended to bring structure, relief and length on the palate.

Subtle but essential, it defines the signature of each of our cuvées.

Maceration

Maceration offers a different reading of botanicals.

Based on a cold brew principle, we allow the botanical ingredients to macerate, slowly releasing their most delicate aromas, fresh, resinous, floral or deeper notes.

This slow extraction allows us to build nuanced aromatic profiles, where each ingredient naturally finds its place and expression.

Infusion

Hot infusion reveals the deeper structure of the ingredients.

Under the effect of temperature, tea unfolds its structure, tannins and umami, while botanicals release enveloping and complex aromas.

This slow extraction at controlled temperature allows to build a rich, nuanced and vibrant aromatic expression, where the botanical material gains depth, texture and dimension.

Nivers cuvées are designed to accompany the full course of a meal.

Their balance, low sweetness and aromatic complexity enable precise pairings across a wide range of cuisines.

Served in a tasting glass, they gradually reveal their nuances throughout the meal.

Whether in a restaurant or at home, a new ritual emerges at the table: a non-alcoholic tasting experience that preserves full gastronomic pleasure.

The extended stability once opened - up to 12 days - makes them ideal for multi-course dining, across a variety of dishes.

Emotional signatures

We believe that a great beverage is not defined by whether it contains alcohol or not.
